碱法提取茅台酒糟中水溶性膳食纤维的工艺研究

摘要:以茅台酱香型酒精为原料,通过单因素试验和正交试验探讨碱法提取酒精中水溶性腊食纤维的最佳工艺条件,即料水比1:17,
加碱量0.9%,提取时间70min,提取温度80℃,水溶性藤食纤维得率为23.6%,额色为焦糖色粉末。关键词:茅台酒糖:碱法;水溶性腊食纤维:提取工艺

Abstract: Moutai vinasse was used as raw materials to conduct alkaline extraction of water-soluble dietary fiber(SDF). The optimum extraction condi-tions were obtained by single-factor and orthogonal experiments based on the extraction rate. The results indicated that the optimal extraction param-eters for SDF were as follows: material-liquid ratio of 1:17, alkaline dosage 0.8%, extraction time 70min and extraction temperature 80°C. Under
these optimal conditions, the extraction rate of SDF was up to 23.6%, and the obtained SDF powder was caramel colour. Key words: Moutai vinasse; alkaline method; water-soluble dietary fiber(SDF); extraction technology
膳食纤维按照溶解性不同可分为水溶性膳食纤维(SDF)和水不溶性膳食纤维(IDF)。水溶性腊食纤维是指不能被人体消化道分泌的消化酶所消化,但可溶于温水或热水,且其水溶液文能被相当于4倍乙醇再沉淀的非淀粉类多糖,其主要成分为水溶性β-葡聚多糖和水溶性戊聚多糖;水不溶性腊食纤维是指不能被人体消化酶消化,且不溶于热水的非淀粉类多糖,其主要为纤维素和几丁质等。其中SDF具有比IDF更强的生理功能,如持水率高,具有润肠通便、降血脂、降血压、排胆固醇、减少脂肪积累、美容减肥、预防结石、抗癌解毒等功效闪,因此越来越被国内外学者及民众所认识和关注。
高梁、小麦是膳食纤维的重要来源。贵州是酿酒大省,如茅台酒是用当地生产的糯性高粱加上小麦为原料的酒曲发酵而成的,其最大副产物—酒中残存着大量的纤

维素、被富集的蛋白质、代谢产物氨基酸、维生素、矿物元素、微生物残体等营养物质闪,是生产蛋白质、膳食纤维等的重要原料。
目前,国内提取SDF的工艺方法有水浸提法、酸碱法、酶法和发酵法47。碱法具有试剂用量少、成本小、污染小、设备要求简单、易于普及等特点。本研究依据单因素和正交试验B-0,探讨了碱法提取茅台酒糟中的SDF的最佳工艺条件,为进一步利用茅台酒糟资源提供试验依据。
1材料与方法 1.1材料
酒糟:2011年贵州茅台酒集团有限公司生产,NaOH 分析纯(成都市科龙化工试剂厂),HCI36%~38%分析纯(成都市科龙化工试剂厂),95%vol乙醇分析纯(成都市科龙化工试剂厂),试验用水均为二次去离子水。
