酱香型白酒中金属元素的分析研究

素、重金属元素及稀土元素。结果表明茅河酒中铝(A1)、(Ba)、锌(Zn)、镍(Ni)、铺(Ce)含量相对较高分别为17.37mg/L、19.20μg/L、%080%69100 相对标准偏差(RSD)为2.1%~2.9%重金属元素回收率为80.0%~109.0%RSD为2.3%~3.9%。表明ICP-OES和ICP-MS法准确度高采用该方法测定白酒中的金属元素是可行的

Analysis of mental elements in Moutai-flavor Baijiu

Abstract :The constant metal elements, heavy metal elements and rare earth elements in Moutai-flavour Bajiu (Chinese liquor) were determined by inductively coupled plasma-optical emission spectrometry (ICP-OES) and inductively coupled plasma-mass spectrometry (ICP-MS). The determina- t aea a fien oe o e as ss 27.25 μg/L and 2.72 μg/L, respectively. The contents ofCa, Ba, Zn, Sr and Ce in Maodu Bajiu were relatively high, which were 12.21 mg/L, 12.30 μg/L, 53.03 μg/L, 14.37 μg/L and 2.01 μg/L, respectively. Eu and Tb in two kinds of Baijiu were not detected. The results of recovery rate experiments showed that the recovery rate of constant metal elements were 96.91%-107.80%, the relative standard deviation (RSD) were 2.1%-2.9%; the recovery rate of heavy metal elements was 80.0%-109.0%, and the RSD was 2.3%-3.9%, which indicated that the ICP-OES and ICP-MS method was with high accuracy degree. So it was feasible to determine the metal elements in Bajiu

我国白酒生产历史悠久工艺独特,与国外的白兰
地、威土忌、伏特加、老姆酒和金酒并列为世界六大蒸酒。白酒接香型分为酱香型、浓香型、清香型、米香型和其他香型。自酒的主要成分为乙醇和水约占自酒组成的 98%但决定其品质和风格的却是仅占2%的微量组分如其他醇类、酯类、有机酸、羰基化合物及各种无机金属元素等。
人们对白酒中的微量成分的研究主要集中在微量有机物质而对于金属元素在白酒中的含量检测分析还相对较少。贺页琴等12的研究着重于常量金属元素的检测分析及其与酒质的关系有学者1-测的研究重点在重金属元素的检测分析刘开庆等-I主要研究在微量金属元素的检测分析但仍鲜见对自酒中常量金属元素、重金属元素、

本次实验选取需香型自酒茅河酒和茅渡酒为研究对
象采用硝化法进行前处理采用电感耦合等离子发射光谱法(inductively coupled plasma-optical emission spectrom-etryICP-OES)和电感耦合等离子质谱法(inductivelycoupled plasma-massspectrometryJCP-MS)对两种酱香型白酒茅河酒和茅渡酒中的常量金属元素、重金属元素和稀土元素进行检测分析并通过回收率检验方法的可靠性。通过本实验找到一种白酒样品只需要一次前处理即可同时测定常量元素、重金属元素、稀土元素的方法,为检测白酒中的常量与金属微量元素提供一种简单、可靠的方法,为进一步研究金属元素的含量与白酒的品质关系提供科学数据支撑。
