Abstr act: The contents of biogenic amines in 17 Chinese traditional cheese samples which were collected from 5 different regions including Inne Mongolia, Xinjiang, Tibet, Yunnan and Beijing were analyzed using reverse-phase high performance liquid chromatography (RP-HPLC). The results showed that RP-HPLC method could accurately determine the contents of biogenic amines in cheese. In all cheese samples, the contents of 8 kinds of biogenic amines varied in size and the total contents were in the range of 1.30-41.27 mg/kg, which was lower than the national standard requirements tsenonaeseooaoalonesasaessaeaeosano which was the highest in all samples, followed by sample No.1 and sample No.9, which were 18.46 mg/kg and 10.35 mg/kg, respectively. 生物胺是氨分子中1~3个氢原子被烷基或芳基取代后而生成的物质"。生物体自身合成的适量生物胺具有促进生长、增强代谢活力等生理功能。同时,生物胺也是一类对多种行为有潜在效应的神经递质,是多数有精神作用功能的分子和精神类药物的作用靶点叫。人体除了自身合成生物胺之外,主要通过食用微生物参与/混入加工的食品或饮品摄入。发酵型干酪、发酵肉制品、发酵酒等产品中生物胺含量较高,其含量与原料、加工或发酵工艺及贮存条件等均直接相关叫。
