宁夏原产地赤霞珠于红葡萄酒同步荧光光谱特征研究

摘要：研究了宁夏原产地赤震珠干红截萄酒在不同的移释梯度、不同的pH值和不同测定时间的荧光光谱特征，确立了同步荧光光谱法测定赤霞珠干红葡萄酒的处理条件和测定方法。测定了不同年份赤霞珠干红葡帮酒在波长差入=Em-Ex分别为10nm、20nm、 30nm、40nm、50nm、60nm、70nm、80nm、90nm和100nm时的同步荧光图谱。所有葡费酒样品的同步荧光图谱具有共同特征，可为建立赤霞珠干红葡萄酒的同步荧光指纹图谱指供依据，另外不同年份与品牌的葡帮酒同步荧光图谱也存在差异性，可以用来区别不同年份，不同品牌的葡费酒。

Characteristics of synchronous fluorescence spectroscopy of Cabernet Sauvignon red wine from Ningxia

Abstract: The fluorescence spectral characteristics of Cabernet Sauvignon red wine from Ningxia, China at different dilutions, different pH value and different determination times were investigated in this study. The treatment conditions and determination methods of Cabernet Sauvignon red wine by synchronous fluorescence spectroscopy were established, The synchronous fluorescence spectra of Cabernet Sauvignon red wines from different years were detected under the wavelength spacing () of 10nm, 20nm, 30nm, 40nm, 50nm, 60nm, 70nm, 80nm, 90nm and 100nm between excitation and emission wavelengths. The results showed that the synchronous fluorescence spectra of wine samples from different years and brands had different peaks, which would be used to discriminate different wines. However, great similarity was discovered from the synchronous fluorescence spectra of

近20年来中国葡萄酒的生产与消费蓬勃发展，但是市场上也充斥了大量的假冒、劣质葡萄酒，严重的损坏了消费者的利益。欧盟早已制定了相关法律法规并采用了多种现代分析检测技术来鉴别鉴定葡帮酒，成熟的检测方法有HPLC，MC-CS等，尽管准确度高但这些方法却成本高又耗时。新兴的方法有荧光光谱法、电子舌、电子鼻等，这些检测方法成本低，速度快，并将发挥更重要作用。同步荧光光谱法是荧光光谱法的一种，特点是简单快速，可以定性定量测定。
国内外研究者已经对同步荧光光谱法用于食品等鉴别做了大量研究，包括对食用油的鉴别-)，睡酒的比较(49 白兰地与葡萄酒蒸馏液的分类，法国与德国葡萄酒的前表面荧光光谱的研究闪，白兰地与威士忌等酒类的鉴别闷，石油的鉴别等。
本实验用同步荧光光谱法，以宁夏原产地不同品牌、不同年份的赤霞珠干红葡萄酒为研究对象，考察了各个葡藝酒的同步荧光图谱：比较了不同稀释倍数、不同测定时间以及不同pH值下葡萄酒的同步荧光图谱：初步确立了测定葡萄酒荧光图谱的实验条件和测定方法：实验结果表明同

步荧光光谱法可以明显区分不同品种及酿造年份的酒样，将其应用于葡萄酒的鉴别具有重要的实践意义和应用前景。
1材料与方法 1.1仪器与样品
荧光分光光度计（岛津RF-5301)，1cm石英比色皿，pH 计Sartorius(PB-10)。
李华赤霞珠干红葡鹤酒是单品种成品酒，贺兰山赤霞珠干红葡葡酒均为单品种原酒。详见表1。
